After the whole 10-day plant-based diet challenge, I decided I should try to eat more salads. They’re super easy to make for lunch with endless topping options, and not to mention, they’re extremely nutritious.
I hadn’t gone grocery shopping in over two weeks since I didn’t have to make my own food during the 10-day challenge. So, I made a trip to Trader Joe’s yesterday to stock up on healthy food for the week. I’m heading to Phoenix in 2 weeks for a vacation with friends, and I’m dedicated to looking good in my swimsuit!
So, I got my basics; bananas, strawberries, eggs, cottage cheese, chicken, etc. And I also picked up some new items that looked interesting, like Goat’s Milk Dutch Cheese, Roasted Garlic Chicken Sausage, and Dijon Crusted Salmon! I’m super excited to try some new recipes this week, but I started off with a simple one I thought I could share.
I always try to find easy ways to pack a healthy lunch for work. I avoid going out to lunch too often, because that’s when I overeat or order something I wouldn’t normally make myself (and it’s usually unhealthy). Today, I made a really simple salad, but it was delicious and nutritious! I was able to incorporate my new Goat’s Milk Dutch Cheese, berries and a new dressing.
This salad recipe is perfect for this time of year and will get you ready for spring. It’s so refreshing and will leave you satisfied.
Nuts & Berries Salad (makes 1 serving)
- 2 Cups Mixed Greens
- 5 Strawberries sliced
- 10 Blackberries
- 1 Slice of Trader Joe’s Sliced Goat’s Milk Dutch Cheese
- 1/4 Cup of Walnuts
- 2 Tbsp. of Trader Joe’s Cranberry, Walnut & Gorgonzola Salad Dressing
Instructions are simple! Simply place all ingredients into a bowl. Toss together. And serve!
